Darling Cellars Vineyards……
Darling Cellars De-alcoholised is a range of varietals where the focus is on fruit-driven, varietal true, value for money wines.
Great light salmon pink colour with ripe strawberries and sweet candyfloss on the nose following through to a balanced pallet with a lingering finish. A blend of 96% Sauvignon Blanc, 4% Grenache wine.
In 2022 Darling Cellars’s De-Alcoholised Rosé was awarded a gold medal at the IWSC as well as the Trophy for the best wine in the Low Alcohol category. The Judges said of the wine “A subtle fruit nose with floral hints of rose petal. An interesting blend of berry and citrus flavours, plus a layer of spice, adding complexity. Offers a very well-rounded finish”
Check out how Darling Cellars is made:
On arrival at the winery, grapes were crushed and destalked before 14 days’ fermentation at 14-15°C. The grapes and juice were handled reductively to prevent oxidation and lock in fruitiness. Post-fermentation, it was left on the lees for 2 months to add complexity. The wine was then de-alcoholised by way of a gently spun cone technology. This was done under vacuum and at a low temperature to ensure that the product retains its distinctive body, colour and flavour.
